Chicken Stew

This savory chicken stew recipe has a unique blend of healthy foods such as chicken breast, pumpkin, lots of veggies, and delightful spices. Enjoy!
1 Tbs    olive oil  
1 lb    boneless skinless chicken breasts, cut into 1" pieces  
1 cup    onions, chopped  
1/2 cup    carrots, sliced  
1 cup    celery, sliced  
1/2 medium    red bell pepper, chopped  
1 3/4 cups    solid pack pumpkin  
1 3/4 cups    chicken broth  
1/2 cup    sour cream (fat-free)  
1 1/4 cups    frozen corn  
3 Tbs    fresh cilantro, chopped  
1/2 tsp    salt  
1/2 tsp    black pepper  
1/2 tsp    oregano, dried  
1/2 tsp    cumin, ground  
1/8 tsp    nutmeg, ground  

1 Heat olive oil in a large pan over a medium high heat.
2 Add chicken, onion, and carrot. Cook for 3-4 minutes or until the chicken is no longer pink.
3 Add celery and red bell pepper. Cook for 3-4 minutes or until vegetables are crisp-tender.
4 Stir in pumpkin, broth, corn, sour cream, cilantro, salt, pepper, oregano, cumin, and nutmeg.
5 Reduce heat to low. Stir occasionally for about 10-15 minutes or until flavors are blended.
