Spicy Tofu Wraps

 
 
This tofu recipe is a hit with vegetarians and meat-eaters alike. The spicy combo of flavors is a satisfying meal.
 
4 Tbs    lime juice (fresh squeezed)  
1 Tbs    canola oil  
8 oz    firm cubed tofu, drained patted dry  
1/2 cup    red onion, chopped  
1/3 cup    fresh cilantro, chopped with stems removed  
1 clove    garlic minced  
4   7"-8" diameter low fat flour tortillas  
2 cups    lettuce chopped  
1 cup    salsa (mild or spicy)  
 

1 Whisk lime juice and oil in a medium bowl. Add tofu, onion, cilantro, and garlic and toss to blend. Season to taste with salt and pepper. Let marinate for 20 minutes.
2 Place tortilla on plate. Top with a layer of lettuce, tofu mixture, and salsa. Roll up tortilla and enjoy!
