Diabetic Greek Salad

 
 
This diabetic Greek salad recipe takes the traditional Greek salad and modifies it slightly to create a delicious and nutritious diabetic friendly salad.
 
1 clove    garlic  
1 medium    head of lettuce, shredded  
3 medium    tomatoes, cut in eighths  
1 medium    English (seedless) cucumber, sliced  
6   green onions, sliced  
3 stalks    celery, diced  
1 medium    green pepper, diced  
6   radishes, sliced  
1   carrot, shredded  
2 Tbs    fresh parsley, chopped  
1 tsp    salt  
1/8 tsp    fresh ground pepper  
1/4 cup    extra virgin olive oil  
1 Tbs    lemon juice, freshly squeezed  
1   beet (canned or cooked), sliced  
4 oz    crumbled feta cheese  
8   ripe olives  
1/4 cup    cooked chick peas  
 

1 Rub large salad bowl with garlic.
2 Combine next 11 ingredients.
3 Toss lightly with olive oil.
4 Sprinkle with lemon juice, toss again.
5 Garnish with a border of sliced beets and feta cheese.
6 Arrange olives in center and sprinkle chick peas all over.
