Diabetic Blueberry Muffin Recipe



Diabetic Blueberry Muffins

 
 
This Diabetic Blueberry Muffin recipe is delicious, low-fat, and high in fiber.
 
1 cup    wheat bran  
1 cup    oat bran  
2 cups    whole wheat flour  
1/3 cup    non-caloric sweetener  
1 Tbs    baking powder  
1 tsp    baking soda  
4   egg whites  
2 cups    lowfat (1%) buttermilk  
1/3 cup    canola oil  
1/3 cup    molasses  
1 cup    fresh or frozen blueberries  
 

1 Preheat oven to 375 degrees F (190 C).
2 In a large bow, mix together bran, flour, sweetener, baking powder, and baking soda.
3 In another bowl, combine egg whites, buttermilk, oil, and molasses.
4 Pour into bran mixture and stir just enough to moisten, being careful not to overmix.
5 Fold in blueberries.
6 Spoon into muffin cups with nonstick cooking spray. Fill almost to the top.
7 Bake for 25 minutes or until firm to the touch.
8 Remove from oven and let stand for 2 minutes before removing muffins from the muffin tin.
