Marinated Chicken Kabob

This amazing ginger curry marinated chicken kabob recipe can be grilled outdoors or on an indoor grill to suit your needs. Enjoy!
4 tsp    fresh lemon juice  
1/2 tsp    cayenne pepper  
  Freshly-ground black pepper, to taste  
1   piece fresh ginger - (abt 1"), peeled, minced  
1 tsp    curry powder  
4 tsp    olive oil  
2   whole boneless skinless chicken breasts, halved, and cut into 1/4" strips  

1 In a medium bowl, combine all ingredients except the chicken. Add the chicken and let marinate overnight in the refrigerator.
2 Thread the chicken onto metal or wooden skewers.
3 Grill over medium heat until chicken is cooked throughout, about 15 minutes. Transfer to a platter and serve.
4 This recipe yields 4 servings. Serving size: 3 to 4 ounces.
