Broccoli Cheese Soup

Enjoy this broccoli cheese soup recipe without any guilt. It is low fat yet retains its rich creamy flavor.
2 bags    frozen broccoli cauliflower carrot mix  
3 cans    chicken broth (low sodium)  
1 can    Rotel tomatoes  
11 oz    Velveeta Light pasteurize cheese (cut into 1" cubes)  

1 Cook frozen vegetables in the chicken broth until tender.
2 Take half of the cooked vegetables out along with some broth and blenderize until very smooth.
3 Put blenderized vegetable back to soup kettle.
4 Add can of Rotel tomatoes and cubed Velveeta Light cheese in soup kettle.
5 Simmer slowly until the cheese is melted.
