Cod Fish Creole

| This cod fish recipe has a Louisiana creole flair. Serve with brown rice and you have a healthy low calorie tasty fish meal. |

celery, sliced |
|

|
green pepper, chopped |
|
| 1 small |
|
onion, sliced thin |
|
| 1 8-oz can |
|
tomato sauce |
|
| 1/2 tsp |
|
salt |
|
| 1/2 tsp |
|
chili powder |
|
| 1/4 tsp |
|
garlic powder |
|
| 1/4 tsp |
|
dried oregano |
|
| 1/4 tsp |
|
dried thyme |
|
| 1 lb |
|
cod fillets |

Combine celery, green pepper and onion in an 8" square microwave safe baking dish. |

Cover with plastic wrap and microwave on high for 2 1/2 minutes or until just tender. |

Mix tomato sauce with seasonings and add to dish. |

Cover and microwave on high for 2 to 3 minutes. |

Push vegetable mixture to one side |

Arrange fillets in dish. |

Spoon vegetables and sauce over fish. |

Cover and microwave on high for 4 to 4 1/2 minutes or until fish flakes apart easily. Rotate dish once. |
