chicken breasts |
|
1 1/2 Tbs |
|
olive oil |
|
3 1/2 Tbs |
|
Take Control Light margarine |
|
1 med |
|
onion |
|
1/2 cup |
|
marsala wine |
|
1 cup |
|
fat-free chicken broth |
|
2 Tbs |
|
fresh parsley, minced |
|
|
|
salt and pepper to taste |

Season chicken breasts with salt and pepper to taste. |

In skillet heat olive oil and 1 1/2 tablespoons Take Control Light margarine over a medium high heat until hot but not smoking. |

Brown chicken in batches, transferring to a plate as browned. |

Saute onion and mushrooms, stirring occasionally until liquid is evaporated. |

Add Marsala and cooking mixture until Marsala is almost evaporated. |

Add broth and chicken and simmer, turning chick once, until cooked through (about 15 minutes). |

Transfer chicken to plate. |

Simmer mushroom sauce until liquid is reduced to about 1/2 cup. |

Remove skillet from heat and stir in remaining 2 tablespoons Take Control Light and salt and pepper to taste, stirring until margarine is incorporated. |

Spoon mushroom sauce around chicken and sprinkle with parsley. |
