Chicken Marsala Recipe

Chicken Marsala

This chicken marsala recipe is delicious and flavorful. It is ready in under 30 minutes!
3 whole    chicken breasts  
1 1/2 Tbs    olive oil  
3 1/2 Tbs    Take Control Light margarine  
1 med    onion  
1/2 cup    marsala wine  
1 cup    fat-free chicken broth  
2 Tbs    fresh parsley, minced  
  salt and pepper to taste  

1 Season chicken breasts with salt and pepper to taste.
2 In skillet heat olive oil and 1 1/2 tablespoons Take Control Light margarine over a medium high heat until hot but not smoking.
3 Brown chicken in batches, transferring to a plate as browned.
4 Saute onion and mushrooms, stirring occasionally until liquid is evaporated.
5 Add Marsala and cooking mixture until Marsala is almost evaporated.
6 Add broth and chicken and simmer, turning chick once, until cooked through (about 15 minutes).
7 Transfer chicken to plate.
8 Simmer mushroom sauce until liquid is reduced to about 1/2 cup.
9 Remove skillet from heat and stir in remaining 2 tablespoons Take Control Light and salt and pepper to taste, stirring until margarine is incorporated.
10 Spoon mushroom sauce around chicken and sprinkle with parsley.
