Oat Bran Buttermilk Pancake Recipe with Blueberry Syrup

 
 
This delicious buttermilk pancake recipe is sure to be a hit with the family. The oat bran can be our little secret. The blueberries are a healthy and flavorful delight!
 

  Ingredients for Pancakes  
1/2 cup    oat bran  
2 large    egg whites  
1/4 cup    whole wheat flour  
1 cup    low-fat buttermilk  
2/3 cup    wheat bran  
1 packet    Splenda  
1/4 tsp    salt  
1/2 tsp    cinnamon  
3/4 tsp    baking soda  
1/3 cup    blueberries  
  fat-free butter flavored cooking spray

 
  Ingredients for Blueberry Syrup  
2 cups    blueberries  
1 cup    apple juice  
1 Tbs    lemon juice  
2 packets    Splenda  
 

1 Blend 2 cups of blueberries and 1 cup apple juice in blender.
2 Pour blended mixture in sauce pan and simmer uncovered for 4 to 5 minutes.
3 Remove blueberry syrup from heat and add 1 tablespoon lemon juice and 2 Splenda packets.
4 Hand mix 1/2 cup oat bran, 2 egg whites, 1/4 cup whole wheat flour, 1 cup buttermilk, 2/3 cup wheat bran, 1 packet Splenda, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, 3/4 teaspoon soda, and 1/3 cup of blueberries until batter is evenly mixed.
5 Spray skillet with fat-free butter flavored cooking spray.
6 Heat skillet at medium low heat.
7 Cook pancakes until lightly brown on one side, then flip and cook the other side until golden brown.
8 Serve with blueberry syrup.
