Black Eye Pea Gumbo

 
 
This black eye pea recipe is a nice alternative to chili. It has great flavor and alot lower in fat.
 
1 Tbs    olive oil  
1 medium    onion, chopped  
1 medium    green pepper, chopped  
1/2 cup    celery  
1 cup    brown rice  
1 lb    black eyed peas  
1 can    no-salt added tomatoes  
1 can    chili peppers, diced  
2 ea    garlic  
2 cups    low sodium chicken broth  
 

1 Cook black eyed peas according to package directions.
2 Drain.
3 Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender.
4 Pour in the chicken broth, and mix in the rice, black-eyed peas, diced tomatoes, chilies and garlic.
5 Bring to a boil, reduce heat to low, and simmer 45 minutes or until rice is tender.
6 Add water if soup is too thick.
