green pepper, chopped |
|
| 1/2 cup |

celery |

| 1 cup |

brown rice |
|
| 1 lb |

black eyed peas |
|
| 1 can |
|
no-salt added tomatoes |
|
| 1 can |
|
chili peppers, diced |
|

|
garlic |
|
| 2 cups |
|
low sodium chicken broth |

Cook black eyed peas according to package directions. |

Drain. |

Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. |

Pour in the chicken broth, and mix in the rice, black-eyed peas, diced tomatoes, chilies and garlic. |

Bring to a boil, reduce heat to low, and simmer 45 minutes or until rice is tender. |

Add water if soup is too thick. |
