Asparagus Soup

| This asparagus soup recipe is incredibly good for you. It combines asparagus, snow peas, and spinach with a pesto sauce and Parmesan cheese to make a very satisfying soup. |

asparagus cut into 1" pieces |
|
| 1/2 cup |
|
chopped onion |
|
| 3 cloves |
|
minced garlic |
|
| 1 Tbs |
|
olive oil |
|
| 6 cups |
|
reduced sodium chicken broth |
|
| 1/2 cup |
|
dried orzo or other tiny pasta |
|
| 3 cups |
|
snow peas |
|
| 6 cups |
|
torn spinach |
|
| 1/4 tsp |
|
pepper |
|
| 1/4 cup |
|
pesto |
|
| 1/4 cup |
|
Parmesan cheese |

Place 1 Tablespoon olive oil in large soup pan and saute onion and garlic until tender. |

Add chicken broth to soup pan and bring to a boil. |

Stir in pasta and reduce heat to a gentle boil for 5 minutes. |

Stir in asparagus and snow peas. Return soup to a boil for 3 minutes. |

Stir in spinach and pepper. Cook 1 minute more. |

Remove soup from heat and ladle into a bowl. |

Add 1 to 2 teaspoons pesto into each bowl of soup. |

Sprinkle Parmesan cheese on the top of each serving. |
