Greek Bean Salad

Greek Bean Salad

 
 
This vegetarian recipe of a Greek bean salad is a satisfying favorite by both meat-eaters and vegetarians. Eat as a salad or stuff a whole wheat pita to make a complete protein.
 
1 15.5 oz can    white beans  
1 1/2 cups    cucumbers, chopped  
1 cup    tomatoes, diced  
1/2 cup    non-fat feta cheese, crumbled  
1/3 cup    red onion, chopped  
1/4 cup    black olives, chopped  
2 Tbs    red wine vinegar  
1 1/2 tsp    dried oregano  
1/4 tsp    pepper  
 



1 Combine all ingredients in a medium bowl and mix well.
2 Cover and refrigerate for at least 4 hours to blend flavors.
