Asian Turkey Soup Recipe

 
 
This turkey soup recipe has a divine Asian flare. It is a great way to use up the post Thanksgiving leftovers.
 
4 oz    wide rice noodles (or your favorite noodle)  
1-2 cups    boiling water to cover the noodles  
6 cups    turkey (or chicken) broth  
1/2 cup    scallions, thinly chopped  
6 slices    ginger, peeled  
2 Tbs    fish sauce (or soy sauce)  
2 cups    turkey, diced (or chicken)  
Garnishes  
  bean sprouts  
  fresh mint leaves  
  lime wedges  
  sliced serrano chilies  
 

Note: If you are using your favorite noodle, prepare as directed on the package otherwise...
1 Place rice noodles in a bowl, add enough boiling water to cover. Let rice noodles stand for 5 minutes, drain, set aside.
2 Combine broth, fish sauce (or soy sauce), ginger, garlic in a large pot.
3 Bring to a boil, lower heat and simmer 15 minutes.
4 Remove ginger from broth and discard.
5 Add turkey (or chicken) and noodles.
6 Add scallions, stir to heat through.
7 Ladle into bowls, and serve with your favorite garnishes as desired.
