Spaghetti Squash Recipe

 
 
This flavorful spaghetti squash recipe is an excellent healthy substitute for regular pasta. It's delicious and only a fraction of the calories and carbs.
 
2 lbs    spaghetti squash  
  fat-free butter flavored cooking spray  
4 Tbs    garlic, minced  
1 cup    green onions, chopped  
1 cup    fresh parsley, chopped  
2 Tbs    lemon juice  
1/4 cup    grated parmesan cheese  
 

1 Pre-heat oven to 350 degrees F.
2 Prick spaghetti squash with a fork all over.
3 Place squash in a baking dish and bake for approximately 60 minutes or until tender.
4 Remove squash from oven and cut in half .
5 After cool, remove seeds and scoop out flesh into a medium bowl separating into spaghetti-like strands with a fork
6 Spray skillet with fat-free butter flavored cooking spray.
7 Saute green onions and garlic for about 3 minutes, stirring lightly.
8 Add squash and stir fry 3 to 5 minutes or until heated through.
9 Stir in parsley and lemon juice. Mix well.
10 Add parmesan cheese and toss to coat.
