Cucumber Salsa Recipe

Radish and Cucumber Salsa

 
 
This salsa recipe is excellent with hot spicy foods. Try with the Blackened Tilapia.
 
5 medium    red radishes  
1 medium    cucumber, chopped  
1/2 medium    sweet red pepper, chopped  
3 medium    scallions, sliced  
1 Tbs    cilantro, chopped  
2 Tbs    fresh lime juice (about 1 medium lime - juiced)  
1 tsp    olive oil  
  salt and pepper to taste  
 



1 Slice each radish in half and then thinly slice each half into 1/2 moons.
2 Combine cucumber, radishes, red pepper, scallions, cilantro, lime juice, and olive oil into a medium bowl and toss.
3 Salt and pepper as desired.
