Salmon with Cucumber-Horseradish Sauce

 
 
This salmon recipe has a wonderful sauce that is a delight to the taste buds!
 
4 fillets    salmon (approximately 4 oz each)  
1/3 cup    finely chopped cucumber  
2 tbs    nonfat mayonnaise  
2 tbs    nonfat yogurt  
1 tbs    Benecol or Take Control margarine, melted  
1 tsp    snipped fresh dill or 1/4 teaspoon dried dill weed  
  cucumber slices, halved (optional)  
  fresh dill (optional)  
 

1 For sauce, in a small bowl combine cucmber, mayonnaise, yogurt, and horseradish. Cover and chill until serving time.
2 Combine margarine and dill and set aside.
3 Place salmon on a greased rack of grill. Brush occaisionally with margarine mixture. Cooks quickly, so keep an eye on fish. Fish is done when it is flaky.
4 Garnish if desired with cucumber slices and fress dill.
