Spinach Pesto

 
 
This spinach pesto recipe is easy to make, tastes great, and is loaded with healthy ingredients. Use as a dip with veggies, as a healthy alternative to mayonnaise on your sandwiches, or as a lighter pasta topping alternative than Alfredo sauce.
 
10 oz pkg    frozen chopped spinach, thawed  
1 cup    parmesan cheese, grated  
1/4 cup    fresh basil leaves  
2 cloves    garlic, minced  
1/2 cup    olive oil  
3 Tbs    lemon juice, freshly squeezed  
 

1 Drain thawed spinach well by pressing into a strainer until very little liquid is removed.
2 Combine spinach with cheese, basil, and garlic in the food processor or blender until mixed.
3 Which machine running, gradually add olive oil a little at a time through the feed tube, until a thick paste forms.
4 Stir in lemon juice, cover, thne store in refrigerator.
