Garden-Style Turkey Loaf

 
 
This ground turkey recipe is a great healthy substitute for standard ground beef meat loaf.
 
1 1/2 lbs    lean ground turkey  
1 10 oz pkg    frozen chopped spinach, thawed and drained  
1 cup    uncooked Quaker Oats  
1/2 cup    finely chopped onion  
1/2 cup    shredded carrots  
2 large    egg whites  
1/3 cup    fat-free milk  
1 1/2 tsp    Italian seasonings  
1 tsp    salt (optional)  
1/4 tsp    pepper  
 

1 Heat oven to 350 degrees F (or 175 C).
2 In large bowl, combine all ingredients, mixing lightly but thoroughly.
3 Bake 1 hour or until center is no longer pink.
4 Let stand 5 minutes before slicing.

Preparation time: 10 minutes
Cooking time: 50 minutes
