Eggplant Pizza

 
 
This eggplant recipe is excellent for those carb-conscious individuals who have a craving for pizza.
 
4 slices    eggplant  
1   roma tomato  
1 sprig    fresh basil  
2 oz    shredded mozzarella cheese  
12 slices    pepperoni  
 



1 Slice eggplant into 1/2" slices.
2 Place eggplant slices in glass pie pan and microwave on high for 90 seconds.
3 Top eggplant with sprigs of fresh basil.
4 Put sliced tomato on eggplant.
5 Top with mozzarella cheese.
6 Top with pepperoni slices.
7 Place under the broiler in the oven to about 2 minutes or until cheese is melted.
