Eggnog Recipe

Eggnog Recipe

 
 
This light non-alcoholic eggnog recipe is reduced in fat, cholesterol, and calories, yet tastes great. Give it a try!
 
6 cups    skim milk  
1 cup    Egg Beaters (or comparable product)  
6 packets    non-caloric sweetener  
2 tsp    real vanilla extract  
2 tsp    rum extract  
sprinkle as desired    pumpkin spice  
 



1 Beat half (3 cups) of skim milk, Egg Beaters, and sweetener in a saucepan.
2 On low heat, cook until mixture is thick and thinly coats a spoon.
3 Make sure to stir constantly.
4 Remove from heat and stir in remaining half (3 cups) of skim milk, vanilla, and rum extract.
5 Cover and chill in refrigerator overnight.
6 Serve with a sprinkling of pumpkin spice on the top.
