Chicken Cacciatore

 
 
This chicken cacciatore crock pot recipe is a snap. The flavors blend perfectly. Just assemble in the morning and come home to a great tasting meal. You can also make with your turkey leftovers.
 
3 lbs    chicken (or turkey)  
1 10 oz can    Rotel tomatoes and chilies  
1 10 oz can    tomato soup  
1/3 cup    white wine  
1 medium    green pepper, chopped  
3 cloves    garlic, minced  
1/2 cup    onions, diced  
2 cups    mushrooms, sliced  
1/2 cup    stuffed green olives  
1 tsp    celery seeds  
1/2 tsp    thyme  
 

1 Season chicken (or turkey) with salt and pepper and place in crock pot.
2 Top with all other ingredients.
3 Cook on low for 7 1/2 hours.
4 Remove poultry from crock pot and shred meat from the bones.
5 Return shredded poultry meat into crock pot and stir.
6 Serve on rice or toast.
