Apple Brown Rice Stuffing

 
 
This brown rice recipe makes an excellent stuffing for poultry or pork roast.
 
1 1/2 cups    brown rice, cooked  
3 1/2 cups    apple juice, divided  
1 medium    apple, diced  
1/2 cup    onion, chopped  
1/2 cup    celery, sliced  
1/3 cup    raisins  
1/2 tsp    poultry seasoning  
1/4 tsp    thyme  
1/4 tsp    pepper  
2 tsp    margarine  
1/3 cup    bran  
1/3 cup    almonds, slivered  
 

1 Prepare rice according to package directions, using 3 1/4 cup apple juice for the liquid.
2 Cook diced apple, chopped onion, sliced celery, raisins, poultry seasoning, thyme, and pepper in margarine in a large skillet until the vegetables are tender-crisp. Stir in the cooked brown rice, bran, slivered almonds, and remaining apple juice.
3 Bake at 350 degrees for 35 minutes.
